Hi Darlings, I hope you guys are having a great week so far. I am sitting in my office writing this blog post and drinking a cup of coffee. I have always been a huge fan of Coffee-mate Creamer and all of the amazing flavors they have but my all-time favorite is the Coffee-mate Classic Vanilla Flavored Creamer.
Yesterday I posted one of my favorite #TBT pics on my Instagram. This picture was taken on Thanksgiving Day with my son who loves being in the kitchen with me while I cook. He was helping me (more like just licking spoons) make my favorite cake frosting using Coffee-mate Classic Vanilla Flavored Creamer. I found this recipe online and was so excited because not only can you make it with the Classic Vanilla but you can use any of the flavors you love like Toll House® Chocolate Chip Cookie, or Caramel Macchiato.
I started using use Coffee-mate Classic Vanilla flavored creamer in my daily cup (okay, okay…cups) of coffee on that same day and have not had a day since where I don’t enjoy it. I even buy it when I travel and keep it in my hotel room. It makes me feel like I am close to home and my family.
My son is so big now and although he still loves helping me in the kitchen and licking the spoons of frosting I cant help but to look back at this picture and miss that little boy who is now a wonderful young man. It’s amazing how moments are often linked to foods or smells or sounds.
My Perfect Classic Vanilla Frosting
½ cup room temperature butter
Add a pinch of salt
3 ½ cups of powdered sugar
½ cup of Coffee-mate Classic Vanilla Flavored Creamer (or any Coffee-mate flavored creamers)
Mix with electric mixer until light and fluffy, let sit for 20 minutes and mix by hand one last time.
To add color simply use a bit of food coloring.
*If too thick add a bit more flavored creamer and if too thin add a bit more sugar until you get the consistency you prefer.
