Hi Darlings, I keep getting emails about this, and although I know I have shared this before, some of you guys want a step by step… so here we go. I am not a food blogger but I sure do love to eat, lol! Since I like eating yummy dishes that fall on the healthier side I make this dish often.
It’s super simple to make and even better the next day…Great to take for lunch.
You can use any type of veggies you want but these are first choice.
Chop everything up…
Cook veggies for a few minutes, make sure not to over cook so they keep their bite.
Cook your salmon…I just spray a little non stick spray in my pan, season my salmon with salt, pepper and lemon and let cook for 5 minutes.
Once your salmon is cooked add it to your veggies pan…
Add your brown rice…I use Uncle Ben’s minute rice. Mix everything and just warm for a few minutes (2 min.) then remove from heat.
Now create your dressing… 1/2 Lemon, 1 Teaspoon Dijon Mustard, 2 Tablespoons Olive Oil and wisk vigorously. (note: you can taste your dressing and add more lemon or mustard depending on your taste.
Pour your dressing over the rice and mix well…
